Cooking tips

Brew a soothing cup of CCF tea.

Add 1¼ cups water and ¾ teaspoon each coriander, cumin, and fennel seeds in a saucepan, bring to a boil, cover, let steep for 10 minutes, strain, and enjoy.

Only grind what you need.

Keeping cumin whole helps to preserve its essential oils and flavor, so avoid pre-grinding your cumin in big batches.

Jodhana Cumin comes from the Thar Desert of Rajasthan, a vast and arid landscape that is as harsh as it is beautiful. Amidst its sand dunes, scrub trees, and open skies, is Mangilal Vishnoi’s farm: an oasis of green that grows food and supports cattle, humans, and countless other creatures.

The Vishnoi family has been farming cumin organically for the last five years. Their cumin is grown alongside groundnuts, millets, wheat, and fenugreek, and farmed using vermicomposting, natural pest repellent, and fermented fertilizers.

All of the fertilizers used are made on the 10-acre farm, using local flora, and precious manure from the Vishnoi cows. By working in collaboration with their cattle, and the larger ecosystem, they create a soil biome that is rich in organic matter, despite the surrounding sand dunes.

Mangilal’s dream is to build a resource center to provide bio inputs to other farmers and help grow the regenerative farming movement. The efficacy of these methods is evident in the flavor of Jodhana Cumin: warm and earthy, with notes of licorice - potent like the desert sun.

Are all your spices organic?

Our farm partners have been cultivating spices using practices that go "beyond organic" for well over five years. Although they haven't obtained USDA certification yet, this is primarily because the initial certification can be costly and may lead to cycles of debt. To meet USDA standards, four years of inspections and certificates are required after the first certification. However, we consider this process redundant and unnecessary since we conduct thorough testing on every batch we procure. It's a prerequisite for Diaspora Co. to select farm partners whose soil health and agricultural practices align with our internal standards of growing food regeneratively.

When do the spices expire? How long do they last?

Most of the spices are good 2 years from the mill date, which is listed on the harvest label sticker on the jar or bag. That being said, our spices are extremely potent and fresh as we take incredible care to source yearly and aim for quality, so 2 years is our most conservative guideline, compared to most spices in the grocery store which are often 5-10 years old upon purchase.

What is the best way to store the spices?

Store them in an airtight container in a dark, dry place. Do not store spices in direct sunlight, as this will shorten their shelf life.
