Cooking tips

Black pepper, turmeric’s BFF.

The piperine in a few cracks of black pepper will make turmeric’s curcumin more bioavailable.

Don’t forget the fats, too.

Turmeric’s curcumin is also more bioavailable when paired with a fat like, ghee, coconut oil, or milk.

Why are there red flecks when I bake with turmeric?

When combined with a base, like baking soda, the curcumin in turmeric turns from orange to red. Acids, like citric acid, will make turmeric more yellow.

Bloom without burning.

Furthermore, when adding ground turmeric during the cooking process, add ¼ cup water and let it cook for 1 to 2 minutes until most of the water evaporates.

Pragati Turmeric was Diaspora’s first (and only) spice, when we began in 2017. Seven years later, it remains the star of our pantry, cherished for its earthy fragrance, notes of marigold, and deeply golden color.

This turmeric is the result of years long meticulous research and experimentation process between regenerative farmer Prabhu Kasaraneni, and the scientists at the Indian Institute of Spice Research.

Few farmers grow Pragati Turmeric, because it bears a lower yield than commercially grown varieties. But Prabhu says it is head and shoulders above the rest in terms of flavor and aroma. This is on account of its high curcumin content. Most turmeric has 1-1.5% curcumin; Pragati has 4.5-5%.

At Prabhu’s farm, turmeric grows in the company of marigolds, banana trees, and black rice. The soil is fed with manure from the cows, and precise organic blends made from native tree varieties. Each of these components contributes to an abundant soil biome, which yields its unforgettable flavor.

Are all your spices organic?

Our farm partners have been cultivating spices using practices that go "beyond organic" for well over five years. Although they haven't obtained USDA certification yet, this is primarily because the initial certification can be costly and may lead to cycles of debt. To meet USDA standards, four years of inspections and certificates are required after the first certification. However, we consider this process redundant and unnecessary since we conduct thorough testing on every batch we procure. It's a prerequisite for Diaspora Co. to select farm partners whose soil health and agricultural practices align with our internal standards of growing food regeneratively.

When do the spices expire? How long do they last?

Most of the spices are good 2 years from the mill date, which is listed on the harvest label sticker on the jar or bag. That being said, our spices are extremely potent and fresh as we take incredible care to source yearly and aim for quality, so 2 years is our most conservative guideline, compared to most spices in the grocery store which are often 5-10 years old upon purchase.

What is the best way to store the spices?

Store them in an airtight container in a dark, dry place. Do not store spices in direct sunlight, as this will shorten their shelf life.
