1. Place the coffee beans, cardamom and rose petals in a coffee grinder and grind into a medium coarse powder.
2. Transfer the ground coffee to a mason jar or pitcher and stir in the water. Cover and let sit for 8–12 hours at room temperature or 18–24 hours in the fridge (if it is above 75°F in your house, go for the refrigerator method).
3. To finish, line a fine mesh strainer with a coffee filter and pour the coffee through, discarding the leftover coffee grounds. Refrigerate for up to a week.
4. This recipes makes a cold brew concentrate. To enjoy, mix one part cardamom rose cold brew with one part water. Then, top with whole milk, or your favorite plant-based milk, and a little sweetener like maple syrup or date syrup for the ultimate cold brew experience (we've found that the dairy and sweetener enhances the flavor of the rose). And, don't forget an extra sprinkle of rose petals on top!
